Lentils make a hearty meal that is rich in flavor. The small sized lentils are more tender and cook faster that other brown lentils. In Italy, it is believed that if lentils are the first dish you eat on New Years Day, it will bring you luck the whole year.

Italian Lentil Soup (16 oz)

  • Italian lentil soup
    ¼ cup olive oil
    1 medium onion, chopped
    2 cloves garlic, minced
    10 cups water
    ½ lb. medium Italian sausage Crumbled (optional)
    In a large pot, Sauté onion and garlic in olive oil until tender. Add soup mix, contents of spice packet and water, Bring to a full rolling boil. Reduce heat; cover and continue to cook at a slow rolling boil for approximately 30 mins, or until beans have reached the desired tenderness. Add more water if necessary. Salt to taste. Makes 10 – 1 cup servings.

    spinach, celery, bell peppers) Hydrolyzed Soy Protein, Parsley, Cayenne Pepper, Garlic.
