Green and yellow split peas with bright natural colored lentils. This recipe allows you to add any kind of veggies to the pot, creating limitless variations for a satisfying family meal.

Country Vegetable Soup (19.2 oz)

  • Country Vegetable
    1 – 14.5 oz. can stewed or diced tomatoes
    2 tablespoons olive oil
    1 bell pepper, diced
    1 large onion, diced
    4 cloves garlic, minced
    2 cups vegetables (your choice)
    7 cups water
    In a large pot, Sauté onion, garlic and vegetables in olive oil until tender. Add soup mix, contents of spice packet, tomatoes and water, Bring to a boil. Reduce heat and simmer, covered for approximately 30 mins, or until beans are tender. Add more water if necessary. Salt to taste. Makes 12 – 1 cup servings.
