Bean & Bacon Soup
1-15 oz. can tomato sauce
1 cup cooked crumbled bacon
¼ cup olive oil
1 small onion, chopped
8 cups water
In a large pot, sauté onions in olive oil until tender. Add beans and vegetable mixture from soup package, contents of included
spice packet, bacon, tomato
sauce and water. Bring to a boil. Reduce heat, partially cover and
cook approximately 1-1/2 hours,
or until the beans have reached
the desired tenderness. Add salt
to taste. Add more water if necessary.
Makes about 8-1 cup servings.
