Instructions
Sierra Soups are made following recipes from the Robert Sorrenti family. These are trasured recipes that are full of nutrition, healthy, and yet delicious.
They are NOT fast cooking, instead, this is a delicious SLOW FOOD. Let the pot of bean soup simmer along until beans are tender. The rewards of waiting are a fantastic meal to share with your family.
There are suggestions on the back of every package that instruct you in the preparation of these soups, and here we present you with a few more:
Mama Sorrenti’s Minestrone
- Bean and vegetable mixture and Spice Packet
- ¾ lb. Italian sausage (broken into small pieces) – optional
- 1 -14 ½ oz. can tomatoes
- 3 quarts of water
- 1 large onion, chopped
- 2 Tbsp. olive oil
- 4 oz. Pasta Shells – optional
In a large pot, sauté onions in olive oil until tender. Add sausage and brown. Add water, bean and vegetable mixture, spice packet and tomatoes. Bring to rapid boil for two minutes. Reduce heat cover and cook 2 hours or until beans are tender. Add pasta and salt to taste. Simmer 15 minutes or until pasta is soft. Add water if needed. Garnish with parmesan cheese. Makes about 12 – 1 cup servings. Can be served meatless, or without pasta.

Place pea soup mix, contents of spice packet, and 10 cups water in a large saucepan. Bring to a boil, simmer, partially covered for about 1 hour, or until desired consistency is achieved. May add more water if necessary.
Easy Crockpot DirectionsAdd additional cup water to soup mix. Set on low, cook 6-8 hours until done. May add more water if necessary.
Serving SuggestionsAdd approximately ½ pound cooked/diced ham, sausage, or bacon. Sauté onion and garlic in olive oil until tender.

- ¾ lb. Italian sausage (broken into small pieces) – optional
- 1 -14 ½ oz. can tomatoes
- 3 quarts of water
- 1 large onion, chopped
- 2 Tbsp. olive oil
- 4 oz. Pasta Shells – optional
In a large pot, sauté onions in olive oil until tender. Add spice packet, tomatoes (including juice) cover and simmer 20 minutes. Add water, vinegar, bean and vegetable mixture. Simmer 2 hours or until beans are tender. Add more water if needed. Salt to taste. Makes about 8 – 1 cup servings.
Serving SuggestionsServe hot with a dollop of sour cream and a twist of lime. Serve cold as a bean dip. Chill until firm, add grated cheddar cheese and green onion.

- 1 lb. chopped, boneless, skinless chicken breast
- 1 -14 ½ oz. can tomatoes
- 1 medium onion, chopped
- ¼ cup olive oil
- Worcestershire sauce – to taste
- 2 quarts of water
In a large pot, sauté onions and chicken in olive oil. Add water, bean and vegetable mixture, spice packet, stewed tomatoes and Worcestershire sauce. Bring to a boil, reduce heat cover and simmer 1 hour or until beans are tender. Add more water if needed.
Serving SuggestionsMore and larger pieces of chicken can be added to recipe. Can be served meatless.

Place split pea soup mix, contents of spice packet, and 10 cups water in a large saucepan. Bring to a boil, simmer, partially covered for about 1 hour, or until desired consistency is achieved.

- 1 -8 oz. can tomato sauce
- 2 ½ quarts of water
- 1 large onion, chopped
- 2 cloves of garlic or more
- ¼ cup olive oil
In a large pot, sauté onions and garlic in olive oil until tender. Add water, bean and vegetable mixture, spice packet. Bring to a boil, reduce heat, partially cover and cook until beans are tender. Salt to taste. Add tomato sauce, cook for 30 minutes. Add pasta, partially cover and cook until pasta is tender, about 15 minutes. Add more water if needed. Makes about 8 – 1cup servings.
Serving SuggestionsServe with a drizzle of olive oil and pass the parmesan cheese.

In a 6 quart saucepan, bring 3 quarts water to a full rolling boil. Add soup mix and contents of spice packet. Stir to dissolve spice packet, reduce heat, cover and continue to cook at slow rolling boil for approximately 30 minutes or until lentils are tender. Salt to taste half way through cooking time. More water can be added if needed.
Serving SuggestionsSauté onion and garlic in olive oil with or without approximately ½ lb. crumbled medium Italian sausage. Cook until onion is soft then proceed with the above directions.

- 1 Package Soup Mix
- 1 – 14.5 oz can stewed tomatoes
- 2 Tbsp. olive oil
- 1 bell pepper, diced
- 1 large onion or 4 leeks, diced
- 4 cloves garlic, minced
- 2 cups vegetables (your choice), chopped
- 7 cups water
In a large saucepan, sauté onion, garlic and vegetables in olive oil until tender. Add beans, spice packet and stewed tomatoes. Add water and bring to a boil. Reduce heat, add salt and pepper to taste and simmer covered for approximately 30 minutes or until tender. Makes about 12-1 cup servings. May add more water if necessary.
Serving SuggestionsServe with a drizzle of olive oil and pass the parmesan cheese.

Go to topGrain and Lentil Salad Mix
Bring 10 cups of water and 1 teaspoon salt to a boil. Add mix and contents of spice packet. Bring back to a boil, cover and cook over medium heat for 30-40 minutes, or until tender. Drain and chill. Add chopped raw vegetables of your choice (e.g. tomatoes, celery, parsley, zucchini slices, or bell peppers). We suggest a dressing of olive oil and lemon juice. Balsamic vinegar, wine vinegar or lime juice may be used in place of the lemon juice. Season to taste.
Serving SuggestionsServe on lettuce leaves. Garnish with parsley and/or chives.
